Efficacy of Enriched Medium-chain Fatty Acids in Virgin Coconut Oil in Their Antibacterial Activity against Food Pathogens

چکیده

Free fatty acids (FFA) have been previously shown to be an effective bactericidal agent. In this study, the FFA mixture was attempted isolate from virgin coconut oil (VCO) using lipases and fractionated obtain enriched medium-chain (MCFA) compare its antibacterial efficacy against food pathogens. Three types of – namely, lipozyme TL 100L, Candida rugosa lipase (CRL), porcine pancreas (PPL) were used their in VCO hydrolysis, which CRL found most efficient for process hydrolysis at water: buffer ratio 1:5, concentration 5310 U/g, pH 7, temperature 40 °C. The vacuum-distillation successfully fractionate initial into three fractions: Fraction I containing MCFA (C8–C12) plus II (C12–C14) III LCFA (C14–C20). Among these fractions, observed anti-agent four out five pathogens (negative result Salmonella typhimurium), followed by FFA. Antimicrobial activities study fractions on both Gram-positive strains Gram-negative strains.

Antimicrobial effects of virgin coconut oil and its medium-chain fatty acids on Clostridium difficile.

Clostridium difficile is the leading cause of hospital-acquired antibiotic-associated diarrhea worldwide; in addition, the proliferation of antibiotic-resistant C. difficile is becoming a significant problem. Virgin coconut oil (VCO) has been shown previously to have the antimicrobial activity. This study evaluates the lipid components of VCO for the control of C. difficile. VCO and its most ac...

Antibacterial Activity of Free Fatty Acids from Hydrolyzed Virgin Coconut Oil Using Lipase from Candida rugosa

Free fatty acids (FFAs) were obtained from hydrolyzed virgin coconut oil (VCO) by Candida rugosa lipase (CRL). Four factors' influence on hydrolysis degree (HD) was examined. The best hydrolysis conditions in order to get the highest HD value were determined at VCO to buffer ratio 1 : 5 (w/w), CRL concentration 1.5% (w/w oil), pH 7, and temperature 40°C. After 16 hours' reaction, the HD value a...

Coconut Oil and Medium-Chain Triglycerides

All fats and oils are composed of fat molecules called fatty acids. There are two methods of classifying fatty acids. The one you are most familiar is based on saturation. You have saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids. The second method of classification is based on molecular size or length of the carbon chain in the fatty acid. You have short-chai...

Hepatoprotective Activity of Dried- and Fermented-Processed Virgin Coconut Oil

The present study aims to determine the hepatoprotective effect of MARDI-produced virgin coconut oils, prepared by dried- or fermented-processed methods, using the paracetamol-induced liver damage in rats. Liver injury induced by 3 g/kg paracetamol increased the liver weight per 100 g bodyweight indicating liver damage. Histological observation also confirms liver damage indicated by the presen...
